- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1/2 cup brown sugar (light or dark)
- 1 tsp baking soda
- 1/2 tsp salt
- 1 tsp cinnamon
- 1/2 tsp nutmeg (optional)
- 2 large eggs
- 1/2 cup vegetable oil (or melted butter)
- 1/4 cup plain Greek yogurt or sour cream
- 1 tsp vanilla extract
- 1 1/2 cups fresh or canned peaches, diced (drained if canned)
- 3/4 cup chopped pecans (plus extra for topping, optional)
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan or line it with parchment paper.
- In a large bowl, whisk together the flour, sugars, baking soda, salt, cinnamon, and nutmeg.
- In another bowl, whisk the eggs, oil, yogurt (or sour cream), and vanilla extract until smooth.
- Combine the wet and dry ingredients. Stir just until combined—don’t overmix.
- Fold in the diced peaches and chopped pecans gently.
- Pour the batter into the prepared loaf pan and smooth the top. Sprinkle with extra pecans if desired.
- Bake for 55–65 minutes, or until a toothpick inserted in the center comes out clean.
- Cool in the pan for 10–15 minutes, then transfer to a wire rack to cool completely.
Tips:
- For extra flavor, add a pinch of ground ginger or a splash of almond extract.
- This bread is great served warm with butter or even lightly toasted!
