- 1 tsp ground cinnamon
- 2 large eggs
- ½ cup vegetable oil
- ¼ cup sour cream or plain yogurt
- 1 tsp vanilla extract
- 1 ½ cups fresh or canned peaches (peeled and diced)
- ¾ cup chopped pecans (toasted if desired)
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour a 9×5 inch loaf pan.
- In a large bowl, whisk together flour, sugar, baking soda, salt, and cinnamon.
- In another bowl, beat the eggs, then mix in the oil, sour cream, and vanilla extract.
- Combine wet and dry ingredients just until moistened—do not overmix.
- Fold in the diced peaches and chopped pecans gently.
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake for 55–65 minutes, or until a toothpick inserted in the center comes out clean.
- Cool in the pan for 10–15 minutes, then remove and let it cool completely on a wire rack.
Tip: This bread tastes even better the next day once the flavors have melded. You can also drizzle it with a simple glaze made of powdered sugar and milk for extra sweetness.
