Peach Pecan Bread

INGREDIENTS

  • 2 cups all-purpose flour

  • 1 tsp ground cinnamon
  • 2 large eggs
  • ½ cup vegetable oil
  • ¼ cup sour cream or plain yogurt
  • 1 tsp vanilla extract
  • 1 ½ cups fresh or canned peaches (peeled and diced)
  • ¾ cup chopped pecans (toasted if desired)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×5 inch loaf pan.
  2. In a large bowl, whisk together flour, sugar, baking soda, salt, and cinnamon.
  3. In another bowl, beat the eggs, then mix in the oil, sour cream, and vanilla extract.
  4. Combine wet and dry ingredients just until moistened—do not overmix.
  5. Fold in the diced peaches and chopped pecans gently.
  6. Pour the batter into the prepared loaf pan and smooth the top.
  7. Bake for 55–65 minutes, or until a toothpick inserted in the center comes out clean.
  8. Cool in the pan for 10–15 minutes, then remove and let it cool completely on a wire rack.

Tip: This bread tastes even better the next day once the flavors have melded. You can also drizzle it with a simple glaze made of powdered sugar and milk for extra sweetness.
