Ingredients
- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1/2 cup brown sugar (optional, for extra richness)
- 1/2 teaspoon salt
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1/2 cup unsalted butter, melted (or vegetable oil)
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup buttermilk (or plain yogurt)
- 1 1/2 cups fresh or canned peaches, chopped (drained if using canned)
- 1 cup chopped pecans
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour a standard loaf pan.
- In a large bowl, whisk together the flour, sugar, brown sugar, salt, baking powder, baking soda, and cinnamon.
- In another bowl, whisk the melted butter, eggs, vanilla extract, and buttermilk until smooth.
- Add the wet ingredients to the dry ingredients and stir until just combined — don’t overmix.
- Gently fold in the chopped peaches and pecans.
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake for 50–60 minutes, or until a toothpick inserted into the center comes out clean.
- Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
