Peach Pecan Bread

Ingredients

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup brown sugar (optional, for extra richness)
  • 1/2 teaspoon salt
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 cup unsalted butter, melted (or vegetable oil)
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup buttermilk (or plain yogurt)
  • 1 1/2 cups fresh or canned peaches, chopped (drained if using canned)
  • 1 cup chopped pecans

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a standard loaf pan.
  2. In a large bowl, whisk together the flour, sugar, brown sugar, salt, baking powder, baking soda, and cinnamon.
  3. In another bowl, whisk the melted butter, eggs, vanilla extract, and buttermilk until smooth.
  4. Add the wet ingredients to the dry ingredients and stir until just combined — don’t overmix.
  5. Gently fold in the chopped peaches and pecans.
  6. Pour the batter into the prepared loaf pan and smooth the top.
  7. Bake for 50–60 minutes, or until a toothpick inserted into the center comes out clean.
  8. Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  9. Slice and enjoy!
