A classic, comforting peach cobbler with juicy, ripe peaches and a golden, biscuit-like topping. Perfect for summer gatherings or a cozy dessert.
Ingredients:
- For the Peach Filling:
- 6-8 ripe peaches, peeled, pitted, and sliced (about 2 pounds)
- 1/2 cup granulated sugar
- 2 tablespoons cornstarch
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1 tablespoon lemon juice
- 1 tablespoon of butter.
- For the Cobbler Topping:
- 1 1/2 cups all-purpose flour
- 1/2 cup granulated sugar
- 1 1/2 teaspoons baking powder
- 1/4 teaspoon salt
- 1/2 cup (1 stick) cold unsalted butter, cut into small cubes
- 3/4 cup milk (or buttermilk for extra tang)
- 2 tablespoons of sugar for sprinkling on top of the cobbler topping.
Instructions:
- Prepare the Peach Filling:
- Preheat oven to 375°F (190°C).
- In a large bowl, gently toss the sliced peaches with the granulated sugar, cornstarch, cinnamon, nutmeg, and lemon juice.
- Melt the tablespoon of butter in a 9×13 inch baking dish in the preheating oven. Once melted, remove the dish, and add the peach mixture. Spread evenly.
- Make the Cobbler Topping:
- In a separate bowl, whisk together the flour, sugar, baking powder, and salt.
- Cut the cold butter into the dry ingredients using a pastry blender or your fingertips until the mixture resembles coarse crumbs.
- Pour in the milk and stir just until combined. Do not overmix. The dough will be slightly lumpy.
- Assemble and Bake:
- Drop spoonfuls of the cobbler topping over the peach filling, leaving some spaces in between.
- Sprinkle the 2 tablespoons of sugar over the cobbler topping.
- Bake for 40-45 minutes, or until the topping is golden brown and the peach filling is bubbling.
- Let cool slightly before serving.
- Serve:
- Serve warm, preferably with a scoop of vanilla ice cream or a dollop of whipped cream.

- For extra flavor, you can add a splash of vanilla extract to the peach filling or the cobbler topping.
- If you don’t have fresh peaches, you can use frozen or canned peaches. Be sure to drain canned peaches well.
- If you like a more cake like top, add an egg to the cobbler topping.
- Add a half cup of rolled oats to the dry cobbler topping ingredients for a more rustic texture.
- Add a teaspoon of vanilla extract to the peach filling.
- A dash of almond extract in the topping is also a nice addition.
- If you have them, fresh blueberries or raspberries can be added to the peach filling.
