Peach Bundt Cake Recipe

A delicious and moist cake with the sweet flavor of fresh peaches. Perfect for a summer dessert or a special occasion.

Ingredients:

  • For the Cake:
    • 2 1/2 cups all-purpose flour
    • 2 teaspoons baking powder
    • 1/2 teaspoon salt
    • 1 cup (2 sticks) unsalted butter, softened
    • 2 cups granulated sugar
    • 4 large eggs
    • 1 teaspoon vanilla extract  
    • 1 cup milk
    • 3 cups fresh peaches, peeled, pitted, and sliced
    • 1/4 cup all-purpose flour
  • For the Glaze:
    • 1 cup powdered sugar
    • 2-3 tablespoons milk
    • 1/4 teaspoon almond extract (optional)

Instructions:

  1. Prepare the Pan: Preheat oven to 350°F (175°C). Grease and flour a Bundt pan.
  2. Make the Batter: In a medium bowl, whisk together flour, baking powder, and salt.
  3. Cream Butter and Sugar: In a large bowl, cream together butter and sugar with an electric mixer on medium speed until light and fluffy.
  4. Add Eggs and Vanilla: Beat in eggs one at a time, then stir in vanilla extract.
  5. Combine Wet and Dry Ingredients: In a separate bowl, combine milk and 1/4 cup flour. Gradually add the dry ingredients to the wet ingredients alternately with the milk mixture, beginning and ending with the dry ingredients. Mix until just combined, being careful not to overmix.
  6. Prepare the Peaches: Toss the sliced peaches with 1/4 cup flour to coat.
  7. Combine Peaches and Batter: Gently fold the peaches into the batter.
  8. Bake the Cake: Pour the batter into the prepared Bundt pan and bake for 50-60 minutes, or until a wooden skewer inserted into the center comes out clean.  
  9. Cool the Cake: Let the cake cool in the pan for 10 minutes before inverting it onto a wire rack to cool completely.
  10. Make the Glaze: In a small bowl, whisk together powdered sugar, milk, and almond extract (if using) until smooth. Adjust the amount of milk to achieve desired consistency.
  11. Glaze the Cake: Once the cake is completely cool, drizzle the glaze over the top.
  12. Serve and Enjoy: Slice and serve the cake.
