Pave with Chocolate Mousse & Maracuja (Passion Fruit)

A luscious dessert combining rich chocolate mousse with the vibrant, tangy flavor of maracuja (passion fruit). This pave (a layered dessert) is perfect for special occasions or a sophisticated treat.

Ingredients

For the Chocolate Mousse:

  • 200g dark chocolate, chopped
  • 3 large eggs, separated
  • 50g sugar
  • 300ml heavy cream
  • 1 tsp vanilla extract
  • A pinch of salt

For the Maracuja Layer:

  • 1 cup maracuja (passion fruit) pulp (fresh or frozen)
  • 1/4 cup sugar
  • 1 tbsp lemon juice
  • 2 tbsp cornstarch
  • 1/2 cup water

For Assembly:

  • 200g ladyfingers or sponge cake, cut into pieces
  • Fresh mint leaves (optional, for garnish)

Instructions

  1. Prepare the Chocolate Mousse:
  • Melt the dark chocolate in a heatproof bowl over simmering water, stirring until smooth. Let it cool slightly.
  • In a separate bowl, beat the egg yolks with sugar until pale and creamy. Stir in the melted chocolate and vanilla extract.
  • In another bowl, whip the heavy cream until soft peaks form. Gently fold the whipped cream into the chocolate mixture.
  • In a clean bowl, beat the egg whites with a pinch of salt until stiff peaks form. Gently fold the egg whites into the chocolate mixture until fully combined. Set aside.
  1. Prepare the Maracuja Layer:
  • In a saucepan, combine maracuja pulp, sugar, lemon juice, cornstarch, and water. Stir well and bring to a boil over medium heat.
  • Reduce heat and simmer, stirring constantly, until the mixture thickens. Remove from heat and let it cool.
  1. Assemble the Pave:
  • Arrange a layer of ladyfingers or sponge cake at the bottom of a serving dish or individual glasses.
  • Spread a layer of chocolate mousse over the cake layer.
  • Add a layer of maracuja mixture over the mousse.
  • Repeat the layers, ending with a layer of chocolate mousse on top.
  • Chill in the refrigerator for at least 4 hours or until set.

  • Garnish with fresh mint leaves if desired.
