Ingredients
For the Chocolate Mousse:
- 200g dark chocolate, chopped
- 3 large eggs, separated
- 50g sugar
- 300ml heavy cream
- 1 tsp vanilla extract
- A pinch of salt
For the Maracuja Layer:
- 1 cup maracuja (passion fruit) pulp (fresh or frozen)
- 1/4 cup sugar
- 1 tbsp lemon juice
- 2 tbsp cornstarch
- 1/2 cup water
For Assembly:
- 200g ladyfingers or sponge cake, cut into pieces
- Fresh mint leaves (optional, for garnish)
Instructions
- Prepare the Chocolate Mousse:
- Melt the dark chocolate in a heatproof bowl over simmering water, stirring until smooth. Let it cool slightly.
- In a separate bowl, beat the egg yolks with sugar until pale and creamy. Stir in the melted chocolate and vanilla extract.
- In another bowl, whip the heavy cream until soft peaks form. Gently fold the whipped cream into the chocolate mixture.
- In a clean bowl, beat the egg whites with a pinch of salt until stiff peaks form. Gently fold the egg whites into the chocolate mixture until fully combined. Set aside.
- Prepare the Maracuja Layer:
- In a saucepan, combine maracuja pulp, sugar, lemon juice, cornstarch, and water. Stir well and bring to a boil over medium heat.
- Reduce heat and simmer, stirring constantly, until the mixture thickens. Remove from heat and let it cool.
- Assemble the Pave:
- Arrange a layer of ladyfingers or sponge cake at the bottom of a serving dish or individual glasses.
- Spread a layer of chocolate mousse over the cake layer.
- Add a layer of maracuja mixture over the mousse.
- Repeat the layers, ending with a layer of chocolate mousse on top.
- Chill in the refrigerator for at least 4 hours or until set.
- Serve:
- Garnish with fresh mint leaves if desired.
