Pave Brazilian Dessert Recipe

Pave is a simple yet delicious no-bake Brazilian dessert that resembles a trifle. It’s made with layers of ladyfingers dipped in milk, a creamy filling, and often topped with chocolate ganache.

Ingredients:

  • For the Cream:
    • 2 egg yolks
    • 1 can (14 oz) sweetened condensed milk
    • 1 cup milk
    • 3 tablespoons cornstarch
    • 1 teaspoon vanilla extract
    • 1 cup heavy cream, whipped
  • For the Assembly:
    • 1 package (about 20) ladyfingers
    • 1 cup milk
  • For the Chocolate Ganache (optional):
    • 1 cup semi-sweet chocolate chips
    • 1/2 cup heavy cream

Instructions:

  1. Make the Cream:
    • In a saucepan, whisk together the egg yolks, sweetened condensed milk, and cornstarch until smooth.
    • Gradually whisk in the milk until combined.
    • Cook over medium heat, stirring constantly, until the mixture thickens.
    • Remove from heat and stir in the vanilla extract.
    • Let the cream cool completely, then fold in the whipped cream.
  2. Assemble the Pave:
    • Dip each ladyfinger briefly in the milk and arrange them in a single layer in a glass baking dish.
    • Spread half of the cream over the ladyfingers.
    • Repeat the layers of ladyfingers and cream, ending with a layer of cream.
  3. Make the Chocolate Ganache (optional):
    • Heat the heavy cream in a saucepan until simmering.
    • Pour the hot cream over the chocolate chips in a heatproof bowl.
    • Let it sit for a few minutes, then stir until smooth and glossy.
  4. Finish and Chill:
    • Pour the chocolate ganache over the chilled pave, if desired.
    • Refrigerate for at least 4 hours, or until set.

Tips:

  • You can use different types of cookies instead of ladyfingers, such as vanilla wafers or graham crackers.
  • For a more intense flavor, add a tablespoon of brandy or rum to the milk for dipping the cookies.
  • Get creative with toppings! Try adding fresh berries, grated chocolate, or chopped nuts.

Enjoy your homemade Pave!
