Pave is a simple yet delicious no-bake Brazilian dessert that resembles a trifle. It’s made with layers of ladyfingers dipped in milk, a creamy filling, and often topped with chocolate ganache.
Ingredients:
- For the Cream:
- 2 egg yolks
- 1 can (14 oz) sweetened condensed milk
- 1 cup milk
- 3 tablespoons cornstarch
- 1 teaspoon vanilla extract
- 1 cup heavy cream, whipped
- For the Assembly:
- 1 package (about 20) ladyfingers
- 1 cup milk
- For the Chocolate Ganache (optional):
- 1 cup semi-sweet chocolate chips
- 1/2 cup heavy cream
Instructions:
- Make the Cream:
- In a saucepan, whisk together the egg yolks, sweetened condensed milk, and cornstarch until smooth.
- Gradually whisk in the milk until combined.
- Cook over medium heat, stirring constantly, until the mixture thickens.
- Remove from heat and stir in the vanilla extract.
- Let the cream cool completely, then fold in the whipped cream.
- Assemble the Pave:
- Dip each ladyfinger briefly in the milk and arrange them in a single layer in a glass baking dish.
- Spread half of the cream over the ladyfingers.
- Repeat the layers of ladyfingers and cream, ending with a layer of cream.
- Make the Chocolate Ganache (optional):
- Heat the heavy cream in a saucepan until simmering.
- Pour the hot cream over the chocolate chips in a heatproof bowl.
- Let it sit for a few minutes, then stir until smooth and glossy.
- Finish and Chill:
- Pour the chocolate ganache over the chilled pave, if desired.
- Refrigerate for at least 4 hours, or until set.
Tips:
- You can use different types of cookies instead of ladyfingers, such as vanilla wafers or graham crackers.
- For a more intense flavor, add a tablespoon of brandy or rum to the milk for dipping the cookies.
- Get creative with toppings! Try adding fresh berries, grated chocolate, or chopped nuts.
Enjoy your homemade Pave!
