Pani Puri (Gol Gappa) Recipe

Ingredients

For the Puri:

  • 1 cup semolina (suji)
  • 2 tablespoons all-purpose flour (maida)
  • 1/4 teaspoon baking soda
  • A pinch of salt
  • Water (as needed for dough)
  • Oil (for frying)

For the Pani (Spicy Water):

  • 1/2 cup mint leaves (pudina)
  • 1/2 cup coriander leaves (cilantro)
  • 1-2 green chilies (adjust to taste)
  • 1 tablespoon ginger (grated)
  • 1/2 teaspoon roasted cumin powder
  • 1/4 teaspoon black salt
  • 1/2 teaspoon regular salt
  • 1 tablespoon tamarind pulp (or tamarind paste)
  • 1/2 teaspoon chaat masala
  • 2-3 cups cold water (adjust for consistency)
  • Ice cubes (optional)

For the Filling:

  • 1 cup boiled and mashed potatoes
  • 1/2 cup boiled chickpeas (optional)
  • Salt and pepper to taste
  • Chopped onions (optional)
  • Sweet chutney (optional)

Instructions

  1. Make the Puri:
    • In a mixing bowl, combine semolina, all-purpose flour, baking soda, and a pinch of salt.
    • Gradually add water and knead the mixture into a stiff dough.
    • Let the dough rest for 15-20 minutes.
    • Divide the dough into small balls and roll them out into thin, round discs.
    • Heat oil in a deep frying pan. Once the oil is hot, fry the puris in small batches until they puff up and turn golden brown.
    • Remove and drain on paper towels to remove excess oil.
  2. Prepare the Pani (Spicy Water):
    • In a blender, combine mint leaves, coriander leaves, green chilies, ginger, roasted cumin powder, black salt, regular salt, tamarind pulp, and chaat masala.
    • Add a little water and blend to form a smooth paste.
    • Add the remaining water to adjust the consistency, and mix well.
    • Taste and adjust seasoning, adding more salt or spices if needed. Chill the pani in the refrigerator for at least 30 minutes.
    • Optionally, add ice cubes to the pani before serving.
  3. Prepare the Filling:
    • In a bowl, combine boiled and mashed potatoes with boiled chickpeas (if using).
    • Add salt, pepper, and finely chopped onions (optional). Mix well.
  4. Assemble the Pani Puri:
    • Make a small hole in the center of each puri (use your finger or a spoon).
    • Stuff the puris with the potato filling mixture and a spoonful of sweet chutney (if using).
    • Dip the filled puris into the chilled spicy pani and serve immediately.
