Ingredients

  • 1 1/2 cups all-purpose flour
  • 3 1/2 teaspoons baking powder
  • 1 teaspoon salt
  • 1 tablespoon white sugar
  • 1 1/4 cups milk
  • 1 egg
  • 3 tablespoons butter, melted
  • 1 teaspoon vanilla extract

Instructions

  1. In a large bowl, whisk together flour, baking powder, salt, and sugar.
  2. In a separate bowl, beat the egg. Then, add the milk, melted butter, and vanilla extract, mixing until smooth.
  3. Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix; the batter should be slightly lumpy.
  4. Heat a griddle or non-stick skillet over medium heat and lightly grease with butter or cooking spray.
  5. Pour about 1/4 cup of batter onto the griddle for each pancake. Cook until bubbles form on the surface of the pancake, then flip and cook until golden brown on both sides.
  6. Serve hot with maple syrup, fresh fruit, or any toppings you prefer. Enjoy!
