Ingredients

  • 1 cup all-purpose flour
  • 2 tbsp sugar
  • 1 tsp baking powder
  • 1/4 tsp baking soda
  • Pinch of salt
  • 1/2 cup milk
  • 1 egg
  • 2 tbsp melted butter or oil
  • 1/4 tsp vanilla extract (optional)
  • Optional mix-ins: chocolate chips, blueberries, or banana slices

Instructions

  1. In a small bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
  2. In another bowl, mix the milk, egg, melted butter, and vanilla extract until well combined.
  3. Pour the wet ingredients into the dry ingredients and stir until just combined (don’t overmix).
  4. Grease a microwave-safe mug or ramekin lightly with oil or butter.
  5. Pour the batter into the mug, filling it only halfway. Add optional mix-ins if desired.
  6. Microwave on high for 1 to 1½ minutes, or until the pancake has risen and is cooked through.
  7. Let it cool slightly, then top with syrup, butter, or fruits.
