Ingredients
- 1 cup all-purpose flour
- 2 tbsp sugar
- 1 tsp baking powder
- 1/4 tsp baking soda
- Pinch of salt
- 1/2 cup milk
- 1 egg
- 2 tbsp melted butter or oil
- 1/4 tsp vanilla extract (optional)
- Optional mix-ins: chocolate chips, blueberries, or banana slices
Instructions
- In a small bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
- In another bowl, mix the milk, egg, melted butter, and vanilla extract until well combined.
- Pour the wet ingredients into the dry ingredients and stir until just combined (don’t overmix).
- Grease a microwave-safe mug or ramekin lightly with oil or butter.
- Pour the batter into the mug, filling it only halfway. Add optional mix-ins if desired.
- Microwave on high for 1 to 1½ minutes, or until the pancake has risen and is cooked through.
- Let it cool slightly, then top with syrup, butter, or fruits.
