- 2 cups all-purpose flour
- 1/4 cup granulated sugar
- 1 tbsp baking powder
- 1/2 tsp salt
- 1/2 cup cold unsalted butter, cubed
- 1/2 cup raisins
- Zest of 1 orange
- 2/3 cup heavy cream (plus extra for brushing)
- 1 large egg
- 1 tsp vanilla extract
- Optional: coarse sugar for sprinkling
Instructions
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- In a large bowl, whisk together flour, sugar, baking powder, and salt.
- Cut in the cold butter using a pastry cutter or your fingertips until the mixture resembles coarse crumbs.
- Stir in raisins and orange zest.
- In a separate bowl, whisk together cream, egg, and vanilla. Pour into the dry ingredients and mix until just combined.
- Turn the dough out onto a floured surface and gently knead a few times. Pat into a 1-inch thick circle and cut into 8 wedges.
- Place scones on the baking sheet, brush tops with cream, and sprinkle with coarse sugar if desired.
- Bake for 15–18 minutes or until golden brown.
- Cool slightly and enjoy warm or at room temperature!
