- 2 large oranges
- 1 ½ cups almond flour (or gluten-free flour blend)
- 4 large eggs

Instructions
- Preheat the oven to 350°F (175°C). Grease a 9-inch cake pan or line it with parchment paper.
- Wash and thoroughly dry the oranges. Cut them into quarters, remove the seeds, and blend the whole oranges (peel and all) in a food processor or blender until smooth.
- In a large bowl, whisk together the eggs and sugar until the mixture is light and frothy.
- Add the olive oil and vanilla extract to the egg mixture and whisk until well combined.
- Stir in the orange puree.
- In a separate bowl, combine the almond flour, baking powder, and salt. Gradually fold this dry mixture into the wet ingredients until fully incorporated.
- Pour the batter into the prepared cake pan and smooth the top.
