Orange Cake: Moist Without Milk or Flour

Ingredients

  • 2 large oranges
  • 1 ½ cups almond flour (or gluten-free flour blend)
  • 4 large eggs
  • 1 cup sugar (or sweetener of your choice)
  • ½ cup olive oil (or vegetable oil)
  • 1 tsp baking powder
  • 1 tsp vanilla extract
  • ¼ tsp salt

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9-inch cake pan or line it with parchment paper.
  2. Wash and thoroughly dry the oranges. Cut them into quarters, remove the seeds, and blend the whole oranges (peel and all) in a food processor or blender until smooth.
  3. In a large bowl, whisk together the eggs and sugar until the mixture is light and frothy.
  4. Add the olive oil and vanilla extract to the egg mixture and whisk until well combined.
  5. Stir in the orange puree.
  6. In a separate bowl, combine the almond flour, baking powder, and salt. Gradually fold this dry mixture into the wet ingredients until fully incorporated.
  7. Pour the batter into the prepared cake pan and smooth the top.
  8. Bake for 40-45 minutes, or until a toothpick inserted into the center of the cake comes out clean.
  9. Let the cake cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
