- 2 large oranges (preferably seedless, with thin skin)
- 4 large eggs
- 1 cup granulated sugar (or coconut sugar for a healthier option)
- 2 cups almond flour (or finely ground almonds)
- 1 tsp baking powder
- ½ tsp baking soda
- Pinch of salt
- Optional: 1 tsp vanilla extract or orange zest for extra flavor
Instructions
- Preheat the oven to 350°F (175°C). Grease a 9-inch round cake pan and line the bottom with parchment paper.
- Prepare the oranges:
Wash the oranges thoroughly. Cut them into quarters (remove any seeds if needed), then boil them in water for about 15 minutes to remove bitterness. Drain, cool, and blend into a smooth puree (peel included). - Make the batter:
In a large bowl, beat the eggs and sugar until pale and fluffy. Add the orange puree, vanilla extract (if using), and mix well. - Combine dry ingredients:
In another bowl, mix almond flour, baking powder, baking soda, and salt. Gradually fold into the wet mixture until just combined. - Bake:
Pour the batter into the prepared pan. Bake for 40–50 minutes or until a toothpick inserted in the center comes out clean. - Cool and serve:
Let the cake cool in the pan for 10 minutes, then transfer to a wire rack. Dust with powdered sugar or top with orange glaze if desired.
