Ingredients

For the Base & Cinnamon Layer:

  • 2 cans refrigerated cinnamon rolls (with icing)
  • ½ cup brown sugar
  • 1 tsp ground cinnamon
  • ¼ cup melted butter

For the Cheesecake Layer:

  • 2 packs (8 oz each) cream cheese, softened
  • ½ cup granulated sugar
  • 2 eggs
  • 1 tsp vanilla extract

For Topping:

  • Reserved cinnamon roll icing
  • Powdered sugar (optional)

Instructions

  1. Preheat oven to 180°C (350°F). Grease a 9×13-inch baking pan.
  2. Cut cinnamon rolls into small pieces and spread half in the pan.
  3. In a bowl, mix brown sugar, cinnamon, and melted butter. Drizzle half over the rolls.
  4. Beat cream cheese and sugar until smooth.
  5. Add eggs and vanilla, mix well.
  6. Pour cheesecake mixture over the cinnamon rolls.
  7. Add remaining cinnamon roll pieces on top.
  8. Drizzle the remaining cinnamon mixture.
  9. Bake for 35–40 minutes or until set.
  10. Let cool completely, then drizzle icing on top.
  11. Chill for 2 hours before slicing for best results.
