Ingredients
For the Base & Cinnamon Layer:
- 2 cans refrigerated cinnamon rolls (with icing)
- ½ cup brown sugar
- 1 tsp ground cinnamon
- ¼ cup melted butter
For the Cheesecake Layer:
- 2 packs (8 oz each) cream cheese, softened
- ½ cup granulated sugar
- 2 eggs
- 1 tsp vanilla extract
For Topping:
- Reserved cinnamon roll icing
- Powdered sugar (optional)
Instructions
- Preheat oven to 180°C (350°F). Grease a 9×13-inch baking pan.
- Cut cinnamon rolls into small pieces and spread half in the pan.
- In a bowl, mix brown sugar, cinnamon, and melted butter. Drizzle half over the rolls.
- Beat cream cheese and sugar until smooth.
- Add eggs and vanilla, mix well.
- Pour cheesecake mixture over the cinnamon rolls.
- Add remaining cinnamon roll pieces on top.
- Drizzle the remaining cinnamon mixture.
- Bake for 35–40 minutes or until set.
- Let cool completely, then drizzle icing on top.
- Chill for 2 hours before slicing for best results.
