Ingredients

  • 2 large potatoes, peeled and boiled
  • 2 eggs
  • 1 tablespoon butter (or oil)

Instructions

  1. Mash the boiled potatoes in a bowl until smooth. Add salt and pepper if desired.
  2. In a separate bowl, beat the eggs.
  3. Heat a non-stick pan over medium heat and melt the butter.
  4. Spread the mashed potatoes into the pan, pressing them down into a flat round shape.
  5. Pour the beaten eggs over the potatoes.
  6. Cover with a lid and cook on low heat for about 5–7 minutes, or until the eggs are set and the bottom is golden.
  7. (Optional: Sprinkle grated cheese on top before covering, so it melts into the topping.)
  8. Slide onto a plate, slice, and enjoy warm!
