Ingredients
- 2 large potatoes, peeled and boiled
- 2 eggs
- 1 tablespoon butter (or oil)

Instructions
- Mash the boiled potatoes in a bowl until smooth. Add salt and pepper if desired.
- In a separate bowl, beat the eggs.
- Heat a non-stick pan over medium heat and melt the butter.
- Spread the mashed potatoes into the pan, pressing them down into a flat round shape.
- Pour the beaten eggs over the potatoes.
- Cover with a lid and cook on low heat for about 5–7 minutes, or until the eggs are set and the bottom is golden.
- (Optional: Sprinkle grated cheese on top before covering, so it melts into the topping.)
- Slide onto a plate, slice, and enjoy warm!
