Ingredients
- 1 lb smoked sausage, sliced into ½-inch pieces
- 1 lb baby potatoes, halved (or quartered if large)
- 1 lb fresh green beans, trimmed
- 3 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp paprika
- Salt and black pepper, to taste
- Fresh parsley, chopped (optional, for garnish)
Instructions
- Preheat oven to 400°F (200°C). Lightly grease a large baking sheet.
- Prepare vegetables & sausage: In a large bowl, combine sausage slices, potatoes, and green beans.
- Season: Drizzle with olive oil, then sprinkle garlic powder, onion powder, paprika, salt, and pepper. Toss until everything is well coated.
- Bake: Spread mixture evenly on the baking sheet. Roast for 25–30 minutes, stirring halfway, until potatoes are tender and slightly crispy.
- Serve: Garnish with fresh parsley if desired. Serve hot straight from the pan.
If you want, I can also give you a stovetop version so you don’t have to use the oven. Would you like me to do that?
