Ingredients
- 1 lb smoked sausage, sliced into rounds
- 1 lb baby potatoes, halved (or quartered if large)
- 12 oz fresh green beans, trimmed
- 2 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp paprika
- Salt and pepper, to taste
- Optional: fresh parsley, chopped (for garnish)
Instructions
- Preheat oven to 400°F (200°C). Line a large baking sheet with foil or parchment paper for easy cleanup.
- Prep the ingredients: Wash and halve the baby potatoes. Trim the ends of the green beans. Slice the sausage into ½-inch rounds.
- Combine in a bowl: In a large mixing bowl, toss together the potatoes, green beans, and sausage.
- Season: Drizzle with olive oil, then sprinkle garlic powder, onion powder, paprika, salt, and pepper. Toss everything well to coat evenly.
- Arrange on baking sheet: Spread the mixture in a single layer on the prepared baking sheet.
- Bake for 30–35 minutes, or until the potatoes are tender and slightly crispy and the sausage is browned. Stir halfway through for even roasting.
- Garnish and serve: Sprinkle with chopped parsley if desired, and serve hot.
