One Pan Sausage, Green Beans, and Potatoes


Ingredients

  • 1 lb smoked sausage, sliced into rounds
  • 1 lb baby potatoes, halved (or quartered if large)
  • 12 oz fresh green beans, trimmed
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp paprika
  • Salt and pepper, to taste
  • Optional: fresh parsley, chopped (for garnish)

Instructions

  1. Preheat oven to 400°F (200°C). Line a large baking sheet with foil or parchment paper for easy cleanup.
  2. Prep the ingredients: Wash and halve the baby potatoes. Trim the ends of the green beans. Slice the sausage into ½-inch rounds.
  3. Combine in a bowl: In a large mixing bowl, toss together the potatoes, green beans, and sausage.
  4. Season: Drizzle with olive oil, then sprinkle garlic powder, onion powder, paprika, salt, and pepper. Toss everything well to coat evenly.
  5. Arrange on baking sheet: Spread the mixture in a single layer on the prepared baking sheet.
  6. Bake for 30–35 minutes, or until the potatoes are tender and slightly crispy and the sausage is browned. Stir halfway through for even roasting.
  7. Garnish and serve: Sprinkle with chopped parsley if desired, and serve hot.
