Ingredients
- 1/2 cup uncooked white rice
- 2 cups milk, divided
- 1/3 cup white sugar
- 1/4 teaspoon salt
- 1 beaten egg
- 2/3 cup raisins (optional)
- 1 tablespoon butter
- 1/2 teaspoon vanilla extract
- Ground cinnamon or nutmeg (for garnish, optional)
Instructions
- In a medium saucepan, bring 1 1/2 cups water to a boil. Stir in rice, reduce heat to low, cover, and simmer for 20 minutes or until tender.
- In another saucepan, combine 1 1/2 cups cooked rice, 1 1/2 cups milk, sugar, and salt. Cook over medium heat until thick and creamy (about 15–20 minutes).
- Stir in the remaining 1/2 cup milk, beaten egg, and raisins (if using). Cook for another 2–3 minutes, stirring constantly so the egg doesn’t scramble.
- Remove from heat and stir in butter and vanilla extract.
- Serve warm or chilled. Sprinkle with cinnamon or nutmeg if desired.
