Oatmeal Pancakes Recipe

These hearty pancakes are packed with flavor and fiber, making them a wholesome and satisfying breakfast option.  

Ingredients:

  • 1 cup rolled oats  
  • 1 cup all-purpose flour
  • 2 tablespoons sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 1/4 cups milk
  • 1 egg
  • 2 tablespoons melted butter
  • 1 teaspoon vanilla extract
  • Optional: Fresh or frozen berries, chopped nuts, or maple syrup for serving

Instructions:

  1. Combine dry ingredients: In a large bowl, whisk together oats, flour, sugar, baking powder, and salt.
  2. Whisk wet ingredients: In a separate bowl, whisk together milk, egg, melted butter, and vanilla extract.
  3. Combine wet and dry ingredients: Gradually pour the wet ingredients into the dry ingredients, whisking constantly until just combined. Be careful not to overmix.
  4. Cook the pancakes: Heat a lightly oiled griddle or frying pan over medium heat. Pour about 1/4 cup of batter onto the hot griddle for each pancake.
  5. Flip and cook: Cook until bubbles appear on the surface of the pancakes and the edges look set. Flip and cook for another 1-2 minutes, or until golden brown.
  6. Serve: Remove pancakes from the griddle and serve immediately with your favorite toppings, such as fresh berries, chopped nuts, or maple syrup.
