Oatmeal Pancakes Recipe

These hearty and flavorful pancakes are packed with oats for extra fiber and a satisfyingly chewy texture.  

Ingredients:

  • 1 cup rolled oats  
  • 1 cup all-purpose flour
  • 2 tablespoons granulated sugar
  • 2 teaspoons baking powder  
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 1/4 cups milk  
  • 1 large egg
  • 1/4 cup melted butter
  • 1 teaspoon vanilla extract  
  • Optional: 1/4 cup chopped nuts or berries  

Instructions:

  1. Combine Dry Ingredients: In a large bowl, whisk together the oats, flour, sugar, baking powder, baking soda, and salt.
  2. Combine Wet Ingredients: In a separate bowl, whisk together the milk, egg, melted butter, and vanilla extract.
  3. Combine Wet and Dry: Gradually add the wet ingredients to the dry ingredients, mixing until just combined. Be careful not to overmix.
  4. Fold in Extras: If using, gently fold in the chopped nuts or berries.
  5. Cook Pancakes: Heat a lightly oiled griddle or skillet over medium heat. Pour 1/4 cup of batter for each pancake onto the hot griddle.
  6. Cook Until Golden Brown: Cook for 2-3 minutes per side, or until golden brown and cooked through.
