Instructions
- Preheat your oven to 350°F (175°C). Line a muffin tin or baking tray with parchment paper or lightly grease it.
- In a large bowl, mix together the grated apple, grated carrot, eggs, and applesauce (or mashed banana).
- Stir in the oats, cinnamon, baking powder (if using), and salt until well combined.
- Let the mixture sit for about 5–10 minutes so the oats can soak up some moisture.
