Nun’s Puffs

Ingredients

  • ½ cup (1 stick) unsalted butter
  • 1 cup whole milk
  • ¾ cup all-purpose flour
  • 1 tablespoon granulated sugar
  • ¼ teaspoon salt
  • 4 large eggs
  • Optional: Powdered sugar or honey for serving

Instructions

  1. Preheat your oven to 375°F (190°C). Grease a 12-cup muffin tin generously with butter or nonstick spray.
  2. In a medium saucepan over medium heat, combine the butter and milk. Bring to a boil.
  3. Once boiling, remove from heat and quickly stir in the flour, sugar, and salt all at once. Stir vigorously until the mixture forms a smooth ball and pulls away from the sides of the pan.
  4. Let the dough cool for about 5 minutes. Then beat in the eggs one at a time, mixing well after each addition until smooth and glossy.
  5. Spoon the batter evenly into the prepared muffin cups, filling each about halfway.
  6. Bake for 30–35 minutes, or until the puffs are golden brown and puffed up.
  7. Serve warm, optionally dusted with powdered sugar or drizzled with honey.

Tip: Do not open the oven while baking—this may cause them to collapse.
