Nun’s Puffs

Ingredients

  • 1/2 cup (1 stick) unsalted butter
  • 1 cup whole milk
  • 1 tablespoon granulated sugar
  • 1/8 teaspoon salt
  • 1 cup all-purpose flour
  • 4 large eggs
  • Honey or powdered sugar, for serving (optional)

Instructions

1️⃣ Preheat oven to 375°F (190°C). Grease 12 muffin cups generously with butter or nonstick spray.

2️⃣ Make the dough: In a medium saucepan, melt the butter over medium heat. Add the milk, sugar, and salt; bring just to a boil.

3️⃣ Remove from heat and add the flour all at once. Stir vigorously until the mixture pulls away from the sides of the pan and forms a ball.

4️⃣ Let it cool for about 5 minutes. Add the eggs one at a time, beating well after each addition until smooth and glossy. The dough will be thick and sticky.

5️⃣ Spoon the batter evenly into the prepared muffin cups, filling each about halfway.

6️⃣ Bake for 30–35 minutes, or until the puffs are golden brown and well puffed. Avoid opening the oven door during baking, or they may collapse!

7️⃣ Serve warm with a drizzle of honey or a dusting of powdered sugar.
