Ingredients:

  • For the Nougat:
    • 2 large egg whites
    • 1 cup granulated sugar
    • 1/4 cup light corn syrup
    • 1/4 teaspoon cream of tartar
    • 1 teaspoon vanilla extract
    • 1 cup roasted peanuts, chopped
  • For the Caramel:
    • 1 cup granulated sugar
    • 1/4 cup light corn syrup
    • 1/4 cup butter
    • 1/4 cup heavy cream
    • 1/2 teaspoon salt
  • For the Chocolate Coating (optional):
    • 1 pound semisweet chocolate chips
    • 1 tablespoon shortening

Instructions:

1. Prepare the Nougat:

  • Line an 8×8 inch baking pan with parchment paper, ensuring overhang for easy removal.
  • In a heatproof bowl set over a pot of simmering water (double boiler method), whisk together egg whites, sugar, corn syrup, and cream of tartar until sugar dissolves.
  • Continue whisking constantly until the mixture reaches a firm peak stage (about 10 minutes).
  • Remove from heat and whisk in vanilla extract until combined.
  • Gently fold in chopped peanuts.
  • Pour the nougat mixture into the prepared pan and spread evenly.
  • Let it set at room temperature for at least 4 hours, or until firm.

2. Make the Caramel:

  • In a saucepan over medium heat, combine sugar, corn syrup, and butter.
  • Cook, stirring occasionally, until the mixture turns a deep amber color (about 15 minutes).
  • Remove from heat and carefully whisk in heavy cream and salt.
  • Be cautious as the mixture will bubble vigorously.
  • Pour the caramel evenly over the set nougat.
  • Allow it to cool and set completely.

3. Cut and Coat (Optional):

  • Once the caramel has set, use a sharp knife to cut the nougat into desired bar sizes.
  • If coating with chocolate:
    • Melt chocolate chips and shortening in a double boiler, stirring until smooth.
    • Dip each bar into the melted chocolate, allowing excess to drip off.
    • Place coated bars on a wire rack set over a baking sheet to dry.
