Ingredients
- 2 cups granulated sugar
- 1 cup light corn syrup
- 1/4 cup honey
- 1/4 cup water
- 2 egg whites
- 1/4 teaspoon salt
- 1 teaspoon vanilla extract
- 1 cup almonds or mixed nuts, toasted
- Optional: chocolate for coating
Instructions
- Line an 8×8 inch baking pan with parchment paper. Lightly grease it with butter or cooking spray.
- In a heavy-bottomed saucepan, combine sugar, corn syrup, honey, and water. Stir and heat over medium heat until the sugar dissolves.
- Bring the mixture to a boil without stirring, and cook until it reaches 250°F (use a candy thermometer to check).
- While the sugar mixture is cooking, beat egg whites and salt in a stand mixer on medium-high speed until stiff peaks form.
- Once the sugar mixture reaches 250°F, carefully pour it into the whipped egg whites in a thin stream while beating on low speed. Be cautious to avoid splashes.
- Increase the mixer speed to medium-high and beat until the mixture thickens and becomes glossy, about 5-7 minutes.
- Mix in the vanilla extract and toasted nuts. Stir gently to combine.
- Quickly pour the nougat mixture into the prepared pan, using a spatula to spread it evenly.
- Let the nougat cool completely at room temperature for a few hours or overnight.
- Optional: Melt chocolate and dip or drizzle it over the nougat bars once cooled.
- Cut the nougat into bars and store in an airtight container.
