Ingredients
- 3 medium ripe apples (grated or finely chopped)
- 1 cup raisins
- 1 ½ cups whole wheat flour (or oat flour for gluten-free)
- 1 tsp cinnamon
- 1 tsp baking powder
- ½ tsp baking soda
- 2 large eggs (or flax eggs for vegan)
- 1 tsp vanilla extract
- ¼ cup unsweetened applesauce (optional for extra moisture)
- ¼ tsp salt
- ½ cup chopped nuts (optional – walnuts or almonds)
Instructions
- Preheat the oven to 350°F (175°C). Grease or line a loaf pan or small cake tin with parchment paper.
- Prepare apples and raisins: In a bowl, combine grated apples and raisins. Let them sit together for 5–10 minutes so the raisins plump a bit.
- Mix dry ingredients: In a separate bowl, whisk together the flour, cinnamon, baking powder, baking soda, and salt.
- Combine wet ingredients: In another bowl, beat the eggs, vanilla extract, and applesauce (if using) until well blended.
- Bring it all together: Add the apple-raisin mixture to the wet ingredients. Then fold in the dry mixture just until combined. Add nuts if using.
- Pour into pan: Spread the batter evenly into your prepared pan.
- Bake for 35–45 minutes, or until a toothpick inserted in the center comes out clean.
- Cool and serve: Allow to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
