No Sugar, No Oil, No Milk – Guilt-Free Apple and Raisin Cake Recipe

Ingredients

  • 3 medium ripe apples (grated or finely chopped)
  • 1 cup raisins
  • 1 ½ cups whole wheat flour (or oat flour for gluten-free)
  • 1 tsp cinnamon
  • 1 tsp baking powder
  • ½ tsp baking soda
  • 2 large eggs (or flax eggs for vegan)
  • 1 tsp vanilla extract
  • ¼ cup unsweetened applesauce (optional for extra moisture)
  • ¼ tsp salt
  • ½ cup chopped nuts (optional – walnuts or almonds)

Instructions

  1. Preheat the oven to 350°F (175°C). Grease or line a loaf pan or small cake tin with parchment paper.
  2. Prepare apples and raisins: In a bowl, combine grated apples and raisins. Let them sit together for 5–10 minutes so the raisins plump a bit.
  3. Mix dry ingredients: In a separate bowl, whisk together the flour, cinnamon, baking powder, baking soda, and salt.
  4. Combine wet ingredients: In another bowl, beat the eggs, vanilla extract, and applesauce (if using) until well blended.
  5. Bring it all together: Add the apple-raisin mixture to the wet ingredients. Then fold in the dry mixture just until combined. Add nuts if using.
  6. Pour into pan: Spread the batter evenly into your prepared pan.
  7. Bake for 35–45 minutes, or until a toothpick inserted in the center comes out clean.
  8. Cool and serve: Allow to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

  • Store leftovers in an airtight container for up to 4 days, or freeze slices for later.
