Ingredients
- 2 cups graham cracker crumbs
- Β½ cup unsalted butter, melted
- 1 (8 oz) package cream cheese, softened
- 1 cup powdered sugar
- 1 (8 oz) container whipped topping (Cool Whip), thawed
- 1 (20 oz) can crushed pineapple, drained
- 1 teaspoon vanilla extract
- Β½ cup shredded coconut (optional)
- ΒΌ cup chopped pecans or walnuts (optional)
Instructions
- Prepare the crust β In a bowl, mix graham cracker crumbs and melted butter until combined. Press firmly into the bottom of a 9Γ9-inch dish. Refrigerate while preparing the filling.
- Make the cream layer β In a mixing bowl, beat the cream cheese and powdered sugar until smooth. Add vanilla extract and mix.
- Add pineapple β Gently fold in the drained crushed pineapple and whipped topping until well combined.
- Assemble β Spread the mixture evenly over the prepared crust. Sprinkle shredded coconut and nuts on top if using.
- Chill β Cover and refrigerate for at least 4 hours (or overnight) to set.
- Serve β Slice and enjoy!
