This delicious no-bake fruit cake is perfect for warm weather and is a great way to use up your favorite dried fruits and nuts. Easy to make and even easier to enjoy!


Ingredients:

  • 2 cups mixed dried fruits (raisins, apricots, cranberries, etc.)
  • 1 cup nuts (walnuts, almonds, pecans, chopped)
  • 1 cup graham cracker crumbs (or digestive biscuits, crushed)
  • 1/2 cup sweetened condensed milk
  • 1/4 cup honey or maple syrup
  • 1 teaspoon vanilla extract
  • Optional: 1/2 teaspoon cinnamon or nutmeg for added flavor
  • Fresh fruit or nuts for decoration (optional)

Instructions:

  1. Prepare the Pan: Line a loaf pan or a round cake pan with parchment paper, allowing some overhang for easy removal later.
  2. Mix Ingredients: In a large mixing bowl, combine the mixed dried fruits, nuts, and graham cracker crumbs.
  3. Combine Wet Ingredients: In a separate bowl, whisk together the sweetened condensed milk, honey (or maple syrup), vanilla extract, and spices (if using) until well combined.
  4. Combine Mixtures: Pour the wet mixture into the dry mixture and stir until everything is evenly coated.
  5. Press into Pan: Transfer the mixture to the prepared pan, pressing it down firmly to create an even layer.
