No-Bake Fruit Cake Recipe

This no-bake fruit cake is a delightful and easy-to-make treat that’s perfect for the holidays or any special occasion. Made with a mix of dried fruits, nuts, and flavorful spices, it requires no baking and is ready to enjoy after a few hours of chilling. It’s rich, dense, and a little sweet, making it the ideal dessert for those who love fruit cake but want to avoid the oven.


Ingredients:

  • 2 cups of mixed dried fruits (raisins, apricots, cherries, etc.)
  • 1 cup of crushed graham crackers or digestive biscuits
  • 1 cup of chopped nuts (walnuts, pecans, or almonds)
  • 1/2 cup of honey or maple syrup
  • 1/4 cup of fruit juice (orange or apple)
  • 1/4 cup of rum or brandy (optional)
  • 1 tsp of vanilla extract
  • 1 tsp of cinnamon
  • 1/2 tsp of nutmeg
  • A pinch of salt
  • Optional: dried coconut flakes for topping

Instructions:

  1. In a large bowl, combine the mixed dried fruits and chopped nuts. Set aside.
  2. In a separate bowl, mix the crushed graham crackers or digestive biscuits with the cinnamon, nutmeg, and salt.
  3. In a small saucepan, gently heat the honey (or maple syrup), fruit juice, and rum (if using) until well combined. Remove from heat and add the vanilla extract.
