No-Bake Chocolate Eclair Dessert Recipe

This No-Bake Chocolate Eclair Dessert is a classic, easy-to-make treat that requires no baking. It features layers of graham crackers, a creamy vanilla pudding filling, and a rich chocolate ganache topping, mimicking the flavors of a traditional eclair in a simple, no-fuss dessert.  

Ingredients:

For the Crust:

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 6 tablespoons unsalted butter, melted

For the Filling:  

  • 2 (3.4 ounce) packages instant vanilla pudding mix
  • 3 cups cold milk  
  • 1 (8 ounce) container whipped topping (like Cool Whip)  

For the Chocolate Ganache Topping:

  • 1 cup semi-sweet chocolate chips
  • 1/2 cup heavy cream

Instructions:

  1. Prepare the Crust: In a medium bowl, combine graham cracker crumbs, sugar, and melted butter. Press the mixture firmly into the bottom of a 9×13 inch baking dish to create an even crust.
  2. Make the Pudding Filling: In a large bowl, whisk together the instant vanilla pudding mix and cold milk for 2 minutes until smooth. Let it stand for 5 minutes to thicken. Gently fold in the whipped topping until well combined.
  3. Assemble the Dessert: Layer half of the graham crackers over the crust to create a solid base. Pour the pudding mixture over the graham crackers and spread evenly. Top with the remaining graham crackers, creating another layer.
  4. Make the Chocolate Ganache Topping: Place the chocolate chips in a heat-safe bowl. In a small saucepan, heat the heavy cream over medium heat until it just begins to simmer. Pour the hot cream over the chocolate chips and let it sit for 1-2 minutes. Gently stir until the chocolate is completely melted and smooth.  
  5. Top with Ganache: Pour the chocolate ganache over the top layer of graham crackers, spreading it evenly.
  6. Chill: Cover the baking dish with plastic wrap and refrigerate for at least 4 hours, or preferably overnight, to allow the dessert to set and the flavors to meld.
  7. Serve: Cut the No-Bake Chocolate Eclair Dessert into squares and serve chilled.
