Ingredients:
- For the “Eclair” Layer:
- 1 (16-ounce) package graham crackers (about 12-14 full sheets)
- 2 (3.4-ounce) packages instant vanilla pudding mix
- 3 cups cold milk
- 1 (8-ounce) container whipped topping, thawed
- For the Chocolate Glaze:
- 1/2 cup butter
- 1/4 cup milk
- 1/4 cup unsweetened cocoa powder
- 2 cups powdered sugar
- 1 teaspoon vanilla extract
Instructions:
- Prepare the Pudding:
- In a large bowl, whisk together the instant vanilla pudding mix and cold milk until smooth.
- Let it sit for a few minutes to thicken.
- Fold in the whipped topping until evenly combined.
- Assemble the Cake:
- Line the bottom of a 9×13 inch dish with a single layer of graham crackers. You may need to break some crackers to fit.
- Spread half of the pudding mixture evenly over the graham cracker layer.
- Add another layer of graham crackers.
- Spread the remaining pudding mixture over the second graham cracker layer.
- Add a final layer of the remaining graham crackers on top of the pudding.
- Make the Chocolate Glaze:
- In a medium saucepan over medium heat, melt the butter.
- Stir in the milk and cocoa powder, whisking until smooth.
- Remove from heat and whisk in the powdered sugar and vanilla extract until smooth.
- If the frosting is too thick, add small amounts of milk until you have the desired consistency.
- Glaze and Chill:
- Pour the chocolate glaze evenly over the top layer of graham crackers.
- Refrigerate for at least 4 hours, or preferably overnight, to allow the graham crackers to soften and the flavors to meld.
