Ingredients

For the crust:

  • 2 cups graham cracker crumbs
  • ½ cup melted butter
  • 2 tbsp granulated sugar

  • 16 oz (2 blocks) cream cheese, softened
  • 1 cup powdered sugar
  • 1 tsp vanilla extract
  • 1 tub (8 oz) whipped topping (like Cool Whip)

For the pudding layer:

  • 1 box (3.4 oz) instant cheesecake or vanilla pudding mix
  • 1½ cups cold milk

Topping:

  • 1 can (21 oz) cherry pie filling
  • Extra whipped topping (optional)

Instructions

  1. Make the crust:
    In a bowl, mix graham cracker crumbs, melted butter, and sugar until combined. Press firmly into the bottom of a 9×13-inch pan. Place in the fridge to set while you prepare the layers.
  2. Prepare the cheesecake layer:
    In a mixing bowl, beat softened cream cheese until smooth. Add powdered sugar and vanilla extract and beat again. Fold in the whipped topping until well blended. Spread evenly over the chilled crust.
  3. Prepare the pudding layer:
    In a separate bowl, whisk together the pudding mix and cold milk until it thickens (about 2 minutes). Spread it carefully over the cheesecake layer.
  4. Add cherry topping:
    Gently spoon cherry pie filling evenly over the pudding layer.
  5. Chill and serve:
    Cover and refrigerate for at least 4 hours or overnight for best results. Add extra whipped topping on top before serving if desired.
