No-Bake Caramel Apple Eclair Cake Recipe

This easy-to-make no-bake dessert layers creamy pudding, sweet apple pie filling, and crunchy graham crackers, all topped with a luscious caramel sauce. It’s perfect for fall gatherings or any time you crave a sweet treat.  

Ingredients:

  • For the Filling:
    • 2 (3.4-ounce) packages instant French vanilla pudding mix  
    • 2 2/3 cups cold milk  
    • 1 1/4 cups cold heavy cream  
    • 2 (21-ounce) cans apple pie filling  
    • 1 teaspoon vanilla extract  
    • 3/4 teaspoon kosher salt  
  • For the Crust:
    • 1 (14.4-ounce) box graham crackers
  • For the Topping:
    • 1 (14-ounce) jar prepared caramel topping  
    • Flaky salt (optional)
    • Chopped toasted pecans (optional)  

Instructions:

  1. Make the Pudding Layer:
    • In a large bowl, whisk together the pudding mix and milk until smooth and slightly thickened.  
    • In a separate bowl, beat the heavy cream with an electric mixer until stiff peaks form.
    • Gently fold the whipped cream into the pudding mixture until combined.  
  2. Prepare the Apple Filling:
    • In a medium bowl, combine the apple pie filling, vanilla extract, and salt. Stir well.  
  3. Assemble the Cake:
    • Arrange a single layer of graham crackers in the bottom of a 9×13 inch baking dish.
    • Spread half of the pudding mixture evenly over the graham crackers.  
    • Top with half of the apple pie filling.
    • Repeat the layers of graham crackers, pudding, and apple filling.
    • Finish with a final layer of graham crackers.
  4. Top and Chill:
    • Pour the caramel topping evenly over the top layer of graham crackers.  
    • Sprinkle with flaky salt and chopped pecans, if desired.
    • Refrigerate for at least 8 hours, or overnight, to set.  
  5. Serve and Enjoy:
    • Cut into squares and serve chilled.
