Ingredients

  • 4 cups mixed salad greens (such as arugula, spinach, or lettuce)
  • 2 cups cooked and cooled green beans (blanched)
  • 2 medium tomatoes, cut into wedges
  • 4 hard-boiled eggs, halved
  • 1 cup cooked and flaked tuna (canned or fresh)
  • 1/2 cup Kalamata olives
  • 1/2 cup roasted red peppers, sliced
  • 1 small red onion, thinly sliced
  • 1 medium cucumber, sliced
  • 1/4 cup capers (optional)
  • Fresh parsley for garnish

For the dressing:

  • 3 tbsp olive oil
  • 1 tbsp red wine vinegar
  • 1 tsp Dijon mustard
  • 1 garlic clove, minced
  • Salt and pepper to taste

Instructions
