Ingredients

  • 1 ½ cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg (optional)
  • ½ cup brown sugar
  • ¼ cup granulated sugar
  • ½ cup vegetable oil (or melted butter)
  • 2 large eggs
  • 1 cup unsweetened applesauce
  • 1 teaspoon vanilla extract
  • ½ cup chopped walnuts or pecans (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line it with parchment paper.
  2. In a medium bowl, whisk together flour, baking soda, baking powder, salt, cinnamon, and nutmeg.
  3. In a large mixing bowl, beat together brown sugar, granulated sugar, and oil until well combined. Add eggs, applesauce, and vanilla extract. Mix until smooth.
  4. Gradually add the dry ingredients to the wet ingredients, stirring just until combined. Do not overmix.
  5. Fold in chopped nuts if using.
  6. Pour the batter into the prepared loaf pan and smooth the top.
  7. Bake for 50–60 minutes, or until a toothpick inserted in the center comes out clean.
  8. Let it cool in the pan for 10–15 minutes, then transfer to a wire rack to cool completely.

Tips:

  • Make it healthier by replacing half the flour with whole wheat flour.
