Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg (optional)
  • 1/2 cup sugar (or brown sugar for deeper flavor)
  • 1/2 cup vegetable oil (or melted butter)
  • 1 cup unsweetened applesauce
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup chopped nuts or raisins (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan.
  2. In a medium bowl, whisk together flour, baking soda, baking powder, salt, cinnamon, and nutmeg.
  3. In a large bowl, whisk together sugar and oil until combined. Add eggs one at a time, beating well after each. Stir in vanilla and applesauce.
  4. Gradually add the dry ingredients to the wet ingredients and stir until just combined. Fold in nuts or raisins if using.
  5. Pour batter into the prepared loaf pan.
  6. Bake for 50–60 minutes, or until a toothpick inserted into the center comes out clean.
  7. Let bread cool in the pan for about 10 minutes, then transfer to a wire rack to cool completely.
