Ingredients

  • 8 slices of thick-cut bread (like brioche or sourdough)
  • 2 tablespoons unsalted butter (softened)
  • 1 tablespoon Dijon mustard (optional)
  • 1½ cups grated Gruyère cheese (or Emmental/Cheddar as alternative)
  • 2 large eggs
  • ¼ cup milk
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. Prep the Sandwiches:
    Spread a thin layer of butter on one side of each bread slice. On the unbuttered side, optionally spread some Dijon mustard.
  2. Add Cheese:
    Sprinkle a generous amount of grated cheese on four slices (on the unbuttered side). Top each with another slice, buttered side out, to form sandwiches.
  3. Make Egg Mixture:
    In a shallow bowl, whisk together the eggs, milk, a pinch of salt, and pepper.
  4. Dip & Cook:
    Heat a nonstick skillet or griddle over medium heat. Dip each sandwich briefly into the egg mixture, coating both sides.
  5. Grill:
    Place sandwiches in the skillet and cook until golden brown and crispy, about 3–4 minutes per side. Press lightly with a spatula to ensure even browning and melty cheese inside.
  6. Serve:
    Garnish with chopped parsley if desired. Serve hot with a side salad, tomato soup, or pickles.
