- 2 cups all-purpose flour

- 1 cup unsalted butter, softened

- 4 large eggs
- ½ cup orange juice
- 1 teaspoon vanilla extract
- 2 cups mixed dried fruits (raisins, cherries, cranberries, dates)
- 1 cup chopped nuts (pecans or walnuts)
- ¼ cup dark rum or brandy (optional for soaking)
Instructions
- Preheat oven to 325°F (160°C). Grease and line a loaf pan or round cake pan with parchment paper.
- In a bowl, whisk together flour, baking powder, salt, cinnamon, and nutmeg.
- In another large bowl, cream butter and brown sugar until light and fluffy.
- Add eggs one at a time, mixing well after each addition. Stir in vanilla and orange juice.
- Gradually fold in the dry ingredients until combined.
- Toss the dried fruits and nuts with 1 tablespoon of flour (to prevent sinking) and fold them into the batter.
- Pour the batter into the prepared pan and smooth the top.
- Bake for 60–75 minutes, or until a toothpick inserted in the center comes out clean.
- Cool completely. If desired, brush with rum or brandy, then wrap tightly and let sit for at least 24 hours for flavor to deepen.
