Ingredients
- 2 large cucumbers, thinly sliced
- 2 medium tomatoes, chopped or sliced
- 1 small red onion, thinly sliced
- 1/4 cup white vinegar (or apple cider vinegar)
- 1/4 cup water
- 1–2 tablespoons sugar (adjust to taste)
- Salt and black pepper to taste
- Optional: fresh dill or parsley for garnish
Instructions
- In a large bowl, combine the cucumbers, tomatoes, and red onion.
- In a separate bowl or measuring cup, whisk together the vinegar, water, and sugar until the sugar is dissolved.
- Pour the vinegar mixture over the vegetables and toss to coat evenly.
- Season with salt and pepper to taste.
- Cover and refrigerate for at least 30 minutes to allow the flavors to meld.
- Stir before serving and garnish with fresh herbs if desired.
