My French Grandmother Always Sticks Cloves into an Onion RECIPE

Ingredients

  • 1 large onion, peeled
  • 6-8 whole cloves
  • 4 cups chicken or beef broth (or water)
  • 2 bay leaves
  • 2 garlic cloves, smashed
  • 1 carrot, chopped
  • 1 celery stalk, chopped
  • 1 tsp salt (adjust to taste)
  • ½ tsp black pepper
  • ½ tsp thyme (optional)

Instructions

  1. Take the peeled onion and press the cloves into it evenly around the surface.
  2. In a large pot, bring the broth (or water) to a gentle simmer.
  3. Add the clove-studded onion, bay leaves, garlic, carrot, celery, salt, pepper, and thyme.
  4. Let it simmer for about 30-45 minutes, allowing the flavors to infuse.
  5. Remove the onion, bay leaves, and any large vegetable pieces before serving.
  6. Use this fragrant broth as a base for soups, sauces, or stews!
