DESCRIPTION

These soft and fluffy muffins taste just like classic doughnuts. They are baked, not fried, yet still have that sweet, buttery, bakery-style flavor. Perfect for breakfast, tea time, or a quick dessert treat.


INGREDIENTS

  • 2 cups all-purpose flour
  • 1/2 cup sugar
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1/2 tsp ground nutmeg (for doughnut flavor)
  • 1/2 cup milk
  • 1/3 cup melted butter
  • 1 large egg
  • 1 tsp vanilla extract

Coating:

  • 1/2 cup melted butter
  • 1/2 cup sugar
  • 1 tsp cinnamon (optional)

INSTRUCTIONS

  1. Preheat oven to 180°C (350°F). Grease a muffin tray or line with paper cups.
  2. In a bowl, mix flour, sugar, baking powder, salt, and nutmeg.
  3. In another bowl, whisk milk, melted butter, egg, and vanilla.
  4. Combine wet and dry ingredients and mix gently (do not overmix).
  5. Pour batter into muffin cups, filling about 3/4 full.
  6. Bake for 18–22 minutes or until golden and a toothpick comes out clean.
  7. Let muffins cool slightly, then dip in melted butter and roll in sugar (and cinnamon if using).

TIPS

  • Do not overmix batter or muffins will become dense.
  • Nutmeg is key for real doughnut-like flavor.
  • Dip muffins while still slightly warm so coating sticks well.
  • You can add chocolate chips or jam filling for variation.
  • Best eaten fresh on the same day.
