DESCRIPTION
These soft and fluffy muffins taste just like classic doughnuts. They are baked, not fried, yet still have that sweet, buttery, bakery-style flavor. Perfect for breakfast, tea time, or a quick dessert treat.
INGREDIENTS
- 2 cups all-purpose flour
- 1/2 cup sugar
- 2 tsp baking powder
- 1/2 tsp salt
- 1/2 tsp ground nutmeg (for doughnut flavor)
- 1/2 cup milk
- 1/3 cup melted butter
- 1 large egg
- 1 tsp vanilla extract
Coating:
- 1/2 cup melted butter
- 1/2 cup sugar
- 1 tsp cinnamon (optional)
INSTRUCTIONS
- Preheat oven to 180°C (350°F). Grease a muffin tray or line with paper cups.
- In a bowl, mix flour, sugar, baking powder, salt, and nutmeg.
- In another bowl, whisk milk, melted butter, egg, and vanilla.
- Combine wet and dry ingredients and mix gently (do not overmix).
- Pour batter into muffin cups, filling about 3/4 full.
- Bake for 18–22 minutes or until golden and a toothpick comes out clean.
- Let muffins cool slightly, then dip in melted butter and roll in sugar (and cinnamon if using).
TIPS
- Do not overmix batter or muffins will become dense.
- Nutmeg is key for real doughnut-like flavor.
- Dip muffins while still slightly warm so coating sticks well.
- You can add chocolate chips or jam filling for variation.
- Best eaten fresh on the same day.
