Muffins for Babies

Ingredients

  • 1 cup whole wheat flour
  • 1/2 cup oats (finely ground)
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon cinnamon (optional)
  • 1/4 cup mashed ripe banana (or applesauce)
  • 1/4 cup unsweetened yogurt
  • 1/4 cup milk (or formula/breast milk)
  • 1 tablespoon coconut oil or butter (melted)
  • 1 egg (or egg substitute)
  • 1/2 teaspoon vanilla extract (optional)
  • 1/4 cup finely chopped fruit (like berries or apples) or vegetables (like zucchini)

Instructions

  1. Preheat the oven to 350°F (175°C). Line a mini muffin tin with paper liners or grease lightly.
  2. In a bowl, combine whole wheat flour, ground oats, baking powder, and cinnamon (if using).
  3. In another bowl, whisk together the mashed banana (or applesauce), yogurt, milk, melted coconut oil (or butter), egg, and vanilla extract.
  4. Add the wet ingredients to the dry ingredients and stir until combined.
  5. Gently fold in the chopped fruit or vegetables.
  6. Spoon the batter into the muffin tin, filling each cup about 2/3 full.
  7. Bake for 12-15 minutes, or until a toothpick comes out clean and the muffins are lightly golden.
  8. Let the muffins cool completely before serving to your baby.

These muffins are soft and easy to hold, making them perfect for little hands!
