- 1 cup whole wheat flour
- 1/2 cup oats (finely ground)
- 1/2 teaspoon baking powder
- 1/4 teaspoon cinnamon (optional)
- 1/4 cup mashed ripe banana (or applesauce)
- 1/4 cup unsweetened yogurt
- 1/4 cup milk (or formula/breast milk)
- 1 tablespoon coconut oil or butter (melted)
- 1 egg (or egg substitute)
- 1/2 teaspoon vanilla extract (optional)
- 1/4 cup finely chopped fruit (like berries or apples) or vegetables (like zucchini)
Instructions
- Preheat the oven to 350°F (175°C). Line a mini muffin tin with paper liners or grease lightly.
- In a bowl, combine whole wheat flour, ground oats, baking powder, and cinnamon (if using).
- In another bowl, whisk together the mashed banana (or applesauce), yogurt, milk, melted coconut oil (or butter), egg, and vanilla extract.
- Add the wet ingredients to the dry ingredients and stir until combined.
- Gently fold in the chopped fruit or vegetables.
- Spoon the batter into the muffin tin, filling each cup about 2/3 full.
- Bake for 12-15 minutes, or until a toothpick comes out clean and the muffins are lightly golden.
- Let the muffins cool completely before serving to your baby.
