MOM’S FAMOUS CREAM PUFFS – Don’t Lose This Recipe

Ingredients

For the pastry (choux dough):

  • 1 cup water
  • 1/2 cup unsalted butter
  • 1 cup all-purpose flour
  • 1/4 tsp salt
  • 4 large eggs

For the cream filling:

  • 2 cups heavy whipping cream
  • 1/4 cup powdered sugar (or to taste)
  • 1 tsp vanilla extract

Optional topping:

  • Powdered sugar for dusting
  • Melted chocolate for drizzling

Instructions

  1. Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Make the choux pastry:
    • In a medium saucepan over medium heat, combine water, butter, and salt. Bring to a boil.
    • Once boiling, quickly stir in the flour all at once. Stir vigorously until the mixture forms a ball and pulls away from the sides of the pan.
    • Remove from heat and let it cool for 5–10 minutes.
    • Add eggs one at a time, beating well after each addition until the dough is smooth and glossy.
  3. Shape and bake:
    • Drop spoonfuls of dough onto the prepared baking sheet, leaving space between each.
    • Bake for 30–35 minutes or until puffed and golden brown. Do not open the oven door during baking.
    • Remove from oven and let cool completely.
  4. Make the whipped cream filling:
    • In a mixing bowl, beat the heavy cream, powdered sugar, and vanilla until stiff peaks form.
  5. Assemble the cream puffs:
    • Slice each cooled puff in half.
    • Fill the bottom half with a generous dollop of whipped cream.
    • Replace the top half like a sandwich.
  6. Finishing touches:
    • Dust with powdered sugar and drizzle with melted chocolate if desired.
