Ingredients:
- 2 pounds russet potatoes, peeled and cut into 1-inch cubes
- 1 large onion, chopped
- 1 green bell pepper, chopped
- 1 red bell pepper, chopped
- 1/4 cup olive oil
- 1/4 cup fresh lime juice
- 1/4 cup white vinegar
- 2 tablespoons Cuban oregano
- 1 tablespoon ground cumin
- 1 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions:
- Cook the potatoes: Place the potatoes in a large pot and cover with cold water. Add a pinch of salt. Bring to a boil over high heat, then reduce heat to medium and cook until tender, about 15-20 minutes. Drain and set aside.
- Sauté the vegetables: Heat olive oil in a large skillet over medium-high heat. Add onion, green bell pepper, and red bell pepper. Cook, stirring occasionally, until softened, about 5-7 minutes.
- Make the sauce: In a small bowl, whisk together lime juice, white vinegar, Cuban oregano, ground cumin, garlic powder, salt, and pepper.
- Combine and serve: Add the cooked potatoes to the skillet with the sautéed vegetables. Pour the sauce over the mixture and toss to coat. Cook for a few minutes more, or until the sauce is heated through. Serve hot.
