Mojo Potatoes Recipe

A flavorful and spicy Cuban side dish made with potatoes, onions, peppers, and a tangy citrus-based sauce.

Ingredients:

  • 2 pounds russet potatoes, peeled and cut into 1-inch cubes
  • 1 large onion, chopped
  • 1 green bell pepper, chopped
  • 1 red bell pepper, chopped
  • 1/4 cup olive oil
  • 1/4 cup fresh lime juice
  • 1/4 cup white vinegar
  • 2 tablespoons Cuban oregano
  • 1 tablespoon ground cumin
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions:

  1. Cook the potatoes: Place the potatoes in a large pot and cover with cold water. Add a pinch of salt. Bring to a boil over high heat, then reduce heat to medium and cook until tender, about 15-20 minutes. Drain and set aside.
  2. Sauté the vegetables: Heat olive oil in a large skillet over medium-high heat. Add onion, green bell pepper, and red bell pepper. Cook, stirring occasionally, until softened, about 5-7 minutes.
  3. Make the sauce: In a small bowl, whisk together lime juice, white vinegar, Cuban oregano, ground cumin, garlic powder, salt, and pepper.
  4. Combine and serve: Add the cooked potatoes to the skillet with the sautéed vegetables. Pour the sauce over the mixture and toss to coat. Cook for a few minutes more, or until the sauce is heated through. Serve hot.
