Moist Strawberry Cake

Ingredients

  • 1 box (15.25 oz) white cake mix
  • 1 package (3 oz) strawberry gelatin (Jell-O)
  • 1 cup fresh strawberries, finely chopped
  • 4 large eggs
  • 1/2 cup whole milk
  • 1 cup vegetable oil
  • 1/2 tsp vanilla extract

For the Strawberry Frosting (optional but delicious):

  • 1/2 cup unsalted butter, softened
  • 1/4 cup pureed strawberries (fresh or thawed from frozen)
  • 3 cups powdered sugar
  • 1/2 tsp vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. Mix the batter: In a large bowl, combine cake mix and strawberry gelatin. Add chopped strawberries, eggs, milk, oil, and vanilla. Beat with an electric mixer on medium speed for about 2 minutes, until smooth.
  3. Bake: Pour batter evenly into the prepared pans. Bake for 25–30 minutes, or until a toothpick inserted in the center comes out clean.
  4. Cool: Let the cakes cool in pans for 10 minutes, then remove from pans and let cool completely on a wire rack.
  5. Make the frosting: In a mixing bowl, beat the butter until creamy. Add pureed strawberries, vanilla, and gradually mix in powdered sugar until smooth and fluffy.
  6. Frost: Spread frosting over one cake layer, top with the second layer, and frost the top and sides.
  7. Chill or serve immediately. Garnish with fresh strawberries if desired!
