- 1 box (15.25 oz) white cake mix
- 1 package (3 oz) strawberry gelatin (Jell-O)
- 1 cup fresh strawberries, finely chopped
- 4 large eggs
- 1/2 cup whole milk
- 1 cup vegetable oil
- 1/2 tsp vanilla extract
For the Strawberry Frosting (optional but delicious):
- 1/2 cup unsalted butter, softened
- 1/4 cup pureed strawberries (fresh or thawed from frozen)
- 3 cups powdered sugar
- 1/2 tsp vanilla extract
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
- Mix the batter: In a large bowl, combine cake mix and strawberry gelatin. Add chopped strawberries, eggs, milk, oil, and vanilla. Beat with an electric mixer on medium speed for about 2 minutes, until smooth.
- Bake: Pour batter evenly into the prepared pans. Bake for 25–30 minutes, or until a toothpick inserted in the center comes out clean.
- Cool: Let the cakes cool in pans for 10 minutes, then remove from pans and let cool completely on a wire rack.
- Make the frosting: In a mixing bowl, beat the butter until creamy. Add pureed strawberries, vanilla, and gradually mix in powdered sugar until smooth and fluffy.
- Frost: Spread frosting over one cake layer, top with the second layer, and frost the top and sides.
- Chill or serve immediately. Garnish with fresh strawberries if desired!
