    • 2 teaspoons baking powder
    • 1/2 teaspoon salt
    • 1 cup granulated sugar
    • 1/2 cup unsalted butter, softened
    • 2 large eggs
    • 1/2 cup milk
    • 1/4 cup lemon juice

    • 2-3 tablespoons lemon juice

    • Preheat oven to 350°F (175°C). Grease and flour a loaf pan.
    • In a medium bowl, whisk together flour, baking powder, and salt.
    • In a large bowl, cream together butter and sugar until light and fluffy.
    • Beat in eggs one at a time, then stir in milk, lemon juice, lemon zest, and vanilla extract.
    • Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix.
    • Pour the batter into the prepared loaf pan.
  2. Bake the Loaf:
    • Bake for 45-55 minutes, or until a toothpick inserted into the center comes out clean.
    • Let the loaf cool in the pan for 10 minutes before inverting it onto a wire rack to cool completely.
  3. Make the Glaze:
    • In a small bowl, whisk together powdered sugar, lemon juice, and lemon zest until smooth.
    • Adjust the amount of lemon juice to achieve your desired consistency.
  4. Glaze the Loaf:
    • Once the loaf is completely cool, drizzle the glaze evenly over the top.

Tips and Variations:

  • For extra lemon flavor, add a few drops of yellow food coloring to the batter.
  • Top the glazed loaf with fresh berries or a sprinkle of powdered sugar.
  • Substitute buttermilk for milk for a richer flavor.
  • Use lemon extract instead of fresh lemon juice and zest for a simpler version.
