Ingredients:
- 1 ½ cups all-purpose flour
- ¾ cup unsweetened cocoa powder (good quality)
- 1 ½ cups granulated sugar
- 1 ½ teaspoons baking powder
- ¾ teaspoon baking soda
- ¾ teaspoon salt
- 1 cup buttermilk
- ½ cup vegetable oil
- 2 large eggs
- 2 teaspoons vanilla extract
- 1 cup freshly brewed hot coffee
Instructions:
- Preheat your oven to 350°F (175°C). Grease and flour a 9×5 inch loaf pan or line it with parchment paper. (Parchment paper makes removal a breeze!)
- In a large bowl, whisk together the flour, cocoa powder, sugar, baking powder, baking soda, and salt.
- In a separate bowl, combine the buttermilk, vegetable oil, eggs, and vanilla extract. Whisk until well combined.
- Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix. A few streaks of flour are okay.
- Gradually stir in the hot coffee until the batter is smooth. The batter will be thin.
- Pour the batter into the prepared loaf pan.
