Moist Chocolate Loaf Cake Recipe

This recipe delivers a deliciously moist and fudgy chocolate loaf cake, perfect for any occasion. It’s simple to make and requires minimal ingredients, making it a great treat for both beginner and experienced bakers.

Ingredients:

  • 1 ½ cups all-purpose flour
  • ¾ cup unsweetened cocoa powder (good quality)
  • 1 ½ cups granulated sugar
  • 1 ½ teaspoons baking powder
  • ¾ teaspoon baking soda
  • ¾ teaspoon salt
  • 1 cup buttermilk
  • ½ cup vegetable oil
  • 2 large eggs  
  • 2 teaspoons vanilla extract
  • 1 cup freshly brewed hot coffee

Instructions:

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×5 inch loaf pan or line it with parchment paper. (Parchment paper makes removal a breeze!)
  2. In a large bowl, whisk together the flour, cocoa powder, sugar, baking powder, baking soda, and salt.
  3. In a separate bowl, combine the buttermilk, vegetable oil, eggs, and vanilla extract. Whisk until well combined.  
  4. Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix. A few streaks of flour are okay.
  5. Gradually stir in the hot coffee until the batter is smooth. The batter will be thin.
  6. Pour the batter into the prepared loaf pan.
  7. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs. Ovens vary, so start checking at 50 minutes.
  8. Let the cake cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
  9. Once cooled, you can dust it with powdered sugar, drizzle it with chocolate ganache, or enjoy it plain.

Optional additions:

  • Chocolate chips: Add ½ cup to 1 cup of chocolate chips to the batter for extra chocolate flavor.
  • Nuts: Add ½ cup of chopped nuts (walnuts, pecans) to the batter or sprinkle them on top before baking.
