  • 3/4 cup unsweetened cocoa powder
  • 1 1/2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup granulated sugar
  • 1 cup packed light brown sugar
  • 1 cup buttermilk
  • 1/2 cup vegetable oil
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup boiling water

Instructions:

  1. Preheat and Prepare: Preheat oven to 350°F (175°C). Grease and flour a 9×5 inch loaf pan.
  2. Dry Ingredients: In a large bowl, whisk together flour, cocoa powder, baking powder, baking soda, and salt.
  3. Wet Ingredients: In a separate bowl, whisk together sugar, brown sugar, buttermilk, oil, egg, and vanilla extract.
  4. Combine: Gradually add the wet ingredients to the dry ingredients, mixing until just combined. Do not overmix.
  5. Add Boiling Water: Slowly pour the boiling water into the batter, stirring constantly until the batter is smooth and glossy.
  6. Bake: Pour the batter into the prepared loaf pan and bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  7. Cool: Let the cake cool in the pan for 10 minutes before inverting it onto a wire rack to cool completely.
  8. Serve: Once cooled, slice and enjoy! You can dust with powdered sugar, drizzle with chocolate ganache, or serve with a scoop of ice cream.

Tips & Variations:

  • For a richer flavor: Use high-quality dark chocolate cocoa powder.
  • Add-ins: Stir in 1 cup of chopped chocolate chips or chopped nuts to the batter before baking.
  • Coffee Boost: Replace some of the buttermilk with strong brewed coffee for an extra depth of flavor.
  • Glaze: For a simple glaze, whisk together 1 cup powdered sugar with 2-3 tablespoons milk or water until smooth. Drizzle over the cooled cake.
