This recipe yields a rich, moist, and decadent chocolate loaf cake perfect for any occasion. It’s simple to make and always a crowd-pleaser.

Ingredients:

  • Dry Ingredients:
    • 2 cups all-purpose flour
    • 2 cups granulated sugar
    • ¾ cup unsweetened cocoa powder (good quality)
    • 1 ½ teaspoons baking powder
    • 1 ½ teaspoons baking soda
    • 1 teaspoon salt
  • Wet Ingredients:
    • 1 cup buttermilk
    • ½ cup vegetable oil
    • 2 large eggs
    • 2 teaspoons vanilla extract
    • 1 cup hot coffee.

Instructions:

  1. Preheat and Prepare:
    • Preheat your oven to 350°F (175°C).
    • Grease and flour a 9×5 inch loaf pan. You can also line it with parchment paper for easier removal.
  2. Combine Dry Ingredients:
    • In a large bowl, whisk together the flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. Combine Wet Ingredients:
    • In a separate bowl, whisk together the buttermilk, vegetable oil, eggs, and vanilla extract.
  4. Combine Wet and Dry:
    • Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix.
  5. Add Hot Coffee:
    • Slowly pour the hot coffee into the batter and mix until smooth. The batter will be thin.
  6. Bake:
    • Pour the batter into the prepared loaf pan.
    • Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  7. Cool:
    • Let the cake cool in the pan for 10-15 minutes before inverting it onto a wire rack to cool completely.
  8. Optional Glaze/Frosting:
    • Once the cake is fully cooled, you can dust it with powdered sugar, drizzle it with a chocolate ganache, or frost it with your favorite chocolate frosting.

Tips for Extra Moistness:

  • Use Buttermilk: Buttermilk adds a tangy flavor and keeps the cake moist.
  • Hot Coffee: The hot coffee enhances the chocolate flavor and makes the cake extra moist.
  • Don’t Overmix: Overmixing can lead to a tough cake. Mix until just combined.
  • Cool Completely: Allow the cake to cool completely before frosting to prevent melting.

Enjoy your delicious moist chocolate loaf cake!
