Ingredients
- 1 cup all-purpose flour
- 1/4 cup granulated sugar
- 1 1/2 tsp baking powder
- 1/4 tsp salt
- 1/2 cup milk
- 1 large egg
- 2 tbsp unsalted butter, melted
- 1/2 tsp vanilla extract
- Oil for frying (vegetable or canola)
- 1/2 cup granulated sugar (for coating)
- Optional: 1/2 tsp ground cinnamon (for coating)
Instructions
- Mix dry ingredients: In a medium bowl, whisk together flour, 1/4 cup sugar, baking powder, and salt.
- Combine wet ingredients: In another bowl, whisk together milk, egg, melted butter, and vanilla extract.
- Combine: Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
- Heat oil: In a deep pan or pot, heat about 2 inches of oil to 350°F (175°C).
- Fry: Using a small cookie scoop or spoon, carefully drop small spoonfuls of batter into the hot oil. Fry in batches, turning occasionally, until golden brown (about 2-3 minutes per batch).
- Drain: Remove doughnuts with a slotted spoon and drain on paper towels.
- Coat: While still warm, roll doughnuts in granulated sugar (mix with cinnamon if you like).
- Serve: Enjoy warm and fresh!
