- 1 lb ground beef or turkey
- 1/2 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1/4 cup milk
- 1 egg
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 tsp Worcestershire sauce
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/2 tsp dried thyme (optional)
- 1/2 cup BBQ sauce (plus extra for glazing)
Instructions
- Preheat the oven: Preheat the oven to 375°F (190°C). Grease a muffin tin or line it with muffin liners.
- Prepare the meatloaf mixture: In a large mixing bowl, combine the ground beef or turkey, breadcrumbs, grated Parmesan, milk, egg, onion, garlic, Worcestershire sauce, salt, pepper, and thyme. Mix everything until well incorporated.
- Shape the meatloaf muffins: Scoop out the meat mixture and evenly divide it into the muffin tin, pressing it down gently to form mini meatloafs.
- Top with BBQ sauce: Spoon a small amount of BBQ sauce on top of each mini meatloaf.
- Bake: Place the muffin tin in the preheated oven and bake for 20-25 minutes, or until the meatloaf muffins are cooked through (internal temperature should reach 160°F or 71°C for ground beef).
- Serve: Once done, remove from the oven and let cool slightly before serving. You can drizzle more BBQ sauce on top for extra flavor!
